Blazin’ Chicken

Serves 4
Ingredients: 

3/4 cup Silver Palate Smokey Maple Barbecue Sauce
2 tablespoons bourbon
1/2 tablespoon dark brown sugar
1/4 teaspoon crushed red pepper, optional
2 teaspoons vegetable oil
1-1/2 pounds boneless and skinless chicken breasts, cut into 1-1/2-inch cubes
6 ounces medium-large white mushrooms, wiped, trimmed and quartered
1/3 cup chopped cilantro leaves or flat-leaf parsley
Freshly ground black pepper to taste

Directions: 

A taste of the Old West with the spirits of the South. Combine Silver Palate Smokey Maple Barbecue Sauce with bourbon, brown sugar and red pepper flakes in a small bowl. Heat a large skillet over high heat. Add oil and when hot, add chicken in batches. Don't crowd or chicken will steam. Cook until browned on all sides, stirring often, about 4 minutes. Stir in mushrooms and cook 1 minute, then pour in sauce. Continue cooking until chicken is just cooked through and sauce is thickened, 5 to 6 minutes. Stir in cilantro and black pepper. Serve with cornbread, mashed sweet potatoes and a big salad.
