Tangy Tomato Low Calorie Dressing

Makes 1 cup
Ingredients: 

2 hard-cooked egg yolks
1 cup tomato juice
2 tablespoons Silver Palate Raspberry Vinegar
2 teaspoons grated onion
1/2 teaspoon chopped fresh basil
1/2 teaspoon chopped chives
Freshly ground black pepper to taste

Directions: 

Mash hard-cooked egg yolks in a small bowl. Add remaining ingredients and whisk until well blended. Pour into a container, cover and refrigerate until ready to use or up to 1 week. Whisk again before using.
