Poached Pears in Fudge Sauce

Serves 6

1-1/2 cups sugar
4 tablespoons fresh lemon juice
1 tablespoon vanilla extract
1 (3-inch) piece of cinnamon stick
6 firm, ripe Bartlett or Anjou pears
1 jar Silver Palate Very Fudge Sauce, heated
Candied violets, for garnish, optional


Combine 4 cups of water with sugar, lemon juice, vanilla and cinnamon stick in a deep heavy saucepan. Boil over high heat for 5 minutes. Turn off heat. Peel pears but leave on stems. Simmer pears in syrup until tender, 8 to 10 minutes. Let pears stand in syrup for 20 minutes more. Place each pear on a warmed dessert plate and drizzle lightly with Silver Palate Very Fudge Sauce. Garnish with candied violets, if desired, and serve immediately.
