Green Beans and Potatoes Greek Style
4 tablespoons olive oil
2 medium onions, chopped
1-1/2 pounds green beans, ends removed
1 pound all-purpose potatoes, peeled and cut into large cubes
1 large clove garlic, finely chopped
1 cup Silver Palate Roasted Garlic Pasta Sauce
1/2 teaspoon dried oregano
Pinch red pepper flakes
Salt and freshly ground black pepper to taste
2 tablespoons water
Crumbled feta cheese, optional
Heat 3 tablespoons of the oil in a casserole over medium-high heat. Add onions and sauté until tender. Add beans and potatoes and stir until coated with oil, 3 to 4 minutes. Stir in garlic, cook 30 seconds, then add Silver Palate Roasted Garlic Pasta Sauce, oregano, red pepper flakes, and water. Cover and cook over low heat until beans and potatoes are tender, 45 to 50 minutes. Drizzle on last tablespoon of olive and feta cheese before serving, if desired. Serve either hot or at room temperature.
