Breakfast Burritos

Makes 4 burritos
Ingredients: 

4 (12- to 14-inch) flour tortillas
1 (16-ounce) can vegetarian or low-fat refried beans
1/2 cup shredded fat-reduced sharp Cheddar cheese
4 scrambled eggs or equivalent egg substitutes, optional
3/4 cup Silver Palate Gazpacho or Tequila Salsa
2 scallions, including green parts, thinly sliced, for garnish

Directions: 

Preheat oven to 425° F. Spread refried beans equally over tortillas. Dribble 2 tablespoons cheese over center third of tortilla. Place on baking sheet or broiler pan and bake until hot and cheese bubbles, about 2 minutes. Remove from oven, add scrambled eggs, if desired, and fold in thirds and place on plates. Spoon on Silver Palate Gazpacho or Tequila Salsa. Sprinkle on scallions and serve
