Cranberry-Orange Glazed Sweet Potatoes

Serves 4

2 pounds sweet potatoes, peeled and cut into 1/4-inch slices
2/3 cup orange juice
1/2 cup packed light brown sugar
1/4 cup Silver Palate Spiced Cranberry Apple Chutney
Grated zest of 1 orange
2 teaspoons unsalted butter or margarine
Salt and white pepper to taste
Minced parsley, for garnish


Boil sweet potato slices in a large saucepan until not quite tender, about 5 minutes. Drain and set aside. In same pan, combine orange juice, brown sugar, Silver Palate Spiced Cranberry Apple Chutney, orange zest and butter. Boil over medium-high heat until thickened and slightly reduced. Return potatoes to pan and cook until potatoes are tender, carefully turning slices to coat evenly with glaze. Season with salt and white pepper. Sprinkle on parsley and serve with ham, roast turkey or game birds.
