Sauteed Diced Vegetables with Raspberry Vinegar

Serves 4

1 tablespoon fruity olive or vegetable oil
1 cup diced carrots
1 cup diced turnips
1 cup diced zucchini
2-3 tablespoons Silver Palate Raspberry Vinegar
Salt and freshly ground black pepper to taste
1/3 cup finely chopped flat-leaf parsley, for garnish.


Heat oil in a large nonstick skillet over medium heat. Add diced carrots and turnips and sauté for 5 minutes. Add zucchini, raise heat, and continue stirring and tossing vegetables until zucchini is almost tender, 3 to 4 minutes. Stir in Silver Palate Raspberry Vinegar, season with salt and pepper, sprinkle on parsley and serve immediately with your favorite glazed poultry, grilled meat or fish.
