Silver Palate Picnic Meatloaf
1 small onion, peeled and quartered
1 canned pickled jalapeno, seeds removed, optional
2 large cloves garlic
1/4 cup cilantro or flat-leaf parsley leaves
1-1/4 pounds ground turkey
1-1/2 cups Silver Palate Thick and Rough Oatmeal
1 cup Silver Palate Fra Diavolo Pasta Sauce
3 tablespoons Worcestershire sauce
2 eggs or equivalent egg substitute
1 teaspoon salt or to taste
Freshly ground black pepper to taste
3/4 cup frozen peas and corn kernels, defrosted
3 tablespoons tomato paste
This is an updated version of a comfort food staple that's lighter in texture than the traditional beef-pork mixture but very long on taste. Made with ground turkey and lots of tasty additions, it's equally good hot or served at room temperature and for sandwiches.Preheat oven to 350° F. Combine onion, jalapeno, garlic and cilantro in a food processor. With on-off pulses, chop until fairly fine. Add turkey, Silver Palate Thick and Rough Milled Oatmeal, Silver Palate Fra Diavolo Pasta Sauce, Worcestershire sauce, eggs, salt and pepper. Pulse until just blended. Do not overprocess. Add corn, pulse a few times to incorporate. Transfer mixture to a 9 X 5 X 3-inch loaf pan, patting to smooth it down. Spread on tomato paste and bake for 70 to 75 minutes, or until juices run clear and loaf has pulled away from edges of pan. Let stand for at least 10 minutes before slicing and serving. Or chill and use for sandwiches.
