Terrific Tuna-Artichoke Melt

Makes 4 open-faced sandwiches

1 (6-ounce) can water-packed solid white tuna, drained
1/2 cup Silver Palate Artsy Artichoke Spread
1/4 cup finely chopped red onion
1 teaspoon fresh lemon juice
Salt and freshly ground black pepper to taste
2 sour dough English muffins, split and toasted, or 4 slices rye bread, toasted
4 ounces grated Jarlsberg or other melting cheese


If you like the proverbial tuna melt, we have a great variation to tempt you. Our Artsy Artichoke Spread makes this classic a special sandwich. Add a tomato slice and a touch of mustard to the hot sandwich, if you like. Combine tuna, Artsy Artichoke Spread, red onion, and lemon juice in a food processor and pulse until blended. Do not purée. Divide tuna-artichoke mixture among English muffin halves or rye bread. Place in a flat pan, drizzle on cheese, and broil about 4 inches from heat until cheese is melted and bubbling, about 1 to 2 minutes. Serve hot with tomato slices and a dab of mustard, if desired.
