Green Bean, New Potato and Tomato Salad

Serves 4

1/2 pound green beans, steamed or boiled until crisp-tender, cooled
1 pound red potatoes, boiled until tender, cooled and sliced
1/2 pound cherry tomatoes, split
3-4 shallots, finely chopped
1 tablespoon thinly sliced fresh basil leaves
4-5 tablespoons Silver Palate Low Fat Roasted Garlic Balsamico Salad Splash
Salt and freshly ground black pepper to taste


Mound green beans in the center of a serving dish. Lay potato slices in a circular design around edge of dish. Add tomatoes between potato slices and green beans. Sprinkle shallots over green beans. Add basil and pour on Silver Palate Roasted Garlic Balsamico Salad Splash. Season with salt and pepper. Present salad and toss at table. Add leftover turkey, chicken or tuna for a main course salad.
