Lemon Walnut Vinaigrette

Makes about 3/4 cup

1 tablespoon Silver Palate Dijon Mustard
3 tablespoons fresh lemon juice
1 to 2 tablespoons rice vinegar
1/2 cup walnut oil
Salt and freshly ground black pepper to taste
1 tablespoon minced fresh tarragon leaves or other herb


Silver Palate Dijon Mustard, lemon juice and 1 tablespoon vinegar together in a small bowl. Add oil in a slow, steady stream, whisking constantly. Season with salt and pepper. Stir in tarragon and additional vinegar, if desired. Refrigerate in a covered container until ready to use.
