Cranberry Apple Breakfast Muffins

Makes 12 muffins

1-3/4 cups sifted unbleached all-purpose flour
3/4 teaspoon salt
1/4 cup sugar
2 teaspoons baking powder
1 teaspoon ground allspice
2 eggs or equivalent egg substitute
1/4 cup vegetable oil
3/4 cup sour cream, regular or low-fat
1/4 cup Silver Palate Spiced Cranberry Apple Chutney, chopped
1/4 cup dried cranberries


Preheat oven to 400° F. Grease or line a 12-muffin tin with foil or paper liners. Combine flour, salt, sugar, baking powder and allspice in a large bowl. In another bowl, beat eggs, oil and sour cream until well blended. Carefully mix Silver Palate Spiced Cranberry Apple Chutney and cranberries into dry ingredients. Add egg mixture, mixing just until ingredients are blended. Spoon batter into prepared tin and bake until a knife inserted near the middle comes out clean, about 20 minutes.
