Chilled 'Berries' Soup

Serves 4

1 jar Silver Palate It's The Berries
1 cup dry white vermouth
1 cup fresh orange juice
1/2 cup low-fat plain yogurt
1 tablespoon fresh lemon juice
Grated zest of 1 orange
Sprigs of fresh mint, for garnish


Combine It's The Berries, vermouth and orange juice in mixing bowl and chill well, at least 4 hours. Whisk yogurt and lemon juice together in another bowl until smooth and free of lumps. Whisk 1 cup of berry mixture into yogurt mixture, then stir this into the remaining soup, adding orange zest. Cover and refrigerate 1 hour. Ladle into chilled bowls, garnish with mints sprigs and serve immediately.
